These green Puy (pronounced PWEE) style lentils come from Canada and are an attractive dark green colour with blue marbling. There's no need to pre-soak these lentils, so all you need to do is cook them for around 20 minutes.For cold salads, try mixing green lentils with Sun-Dried Tomatoes, fresh herbs, olive oil and whatever else you like. Or Use just cooked lentils with thyme and roasted garlic.
