Made with rich, (Shetland) buttery pastry and a spiced fruit filling, these mince pies really do capture the warmth and flavour of a traditional Shetland Christmas.

We also mak these in wir shop, and every bite offers a taste of home, nostalgia, and celebration. Whether enjoyed with a cup of tea or as a sweet treat by the fire, we invite you to enjoy this recipe and add a little Shetland magic to your home this Christmas season!

Lots of Loff, Nicola (thanks Mam)!!!

Ingredients

For the Mince Meat:

  • 200g mixed dried fruit
  • 100g dark brown sugar
  • 1 grated apple
  • 50g melted butter
  • zest and juice of 1 orange
  • 1 tsp mixed spice
  • 2 tbsp dark rum (we use Stewarts Rum

For the Pastry:

  • 200g plain flour
  • 100g cold diced butter
  • 1-2 tbsp cold water.
  • Method

Mix all mince meat ingredients in a bowl and let it rest overnight (or at least 2 hours). For the pastry, rub the butter into the flour with your fingers until crumbly, then add water slowly to form a dough. Chill for 30 minutes, roll out thinly, and cut 12 large and 12 small circles.

Preheat oven to 200°C (180°C fan). Line a muffin tin with the larger pastry circles, spoon in mince meat, and cover with the smaller circles, sealing the edges. Bake for 15-20 minutes until golden. Cool slightly and enjoy!

Nothing beats the taste of tradition and the warmth of home.
